Italian Home Cooking with Ciao Gusto – Paprika Chicken Pasta Bake

Serves 6
Ingredients:
- 4 tbsp olive oil
- 1 red onion , finely chopped
- 10 baby mushrooms
- 4 tbsp Cannamela Paprika
- 1 x 400g can chopped tomatoes
- 250g Philadelphia Light (can be full fat, but I’m forever watching my weight)
- 3 skinless chicken breasts, sliced into strips
- 300g penne
- 70g mature cheddar , grated (for the top)
- 50g mozzarella (for the top)
- Salt and pepper, to season
- Garlic bread, to serve

Instructions:
- Heat 4 tbsp of the oil in a pan over a medium heat and fry the onion and mushrooms for 5 mins. Add the sliced chicken and Cannamela Paprika and cook for 10-15 mins. Meanwhile, pop the pasta in some boiled water for 10 mins. Tip in the tomatoes to the chicken pot and season to taste. Then turn the gas off the chicken and add your Philadelphia Light – this is your chicken paprika mix for the pasta.
- Drain the pasta thoroughly, and add the pasta into the chicken paprika mix – stir well until combined.
- Heat the oven to 220C/200C fan/gas 7. Add your pasta bake to an ovenproof dish. Top with mozzarella. Cook the pasta bake for 15-20 mins. Then serve hot and bubbling with lettuce and/or garlic bread.
